Skinny Chicken Enchilada Skillet
Dinner: April 21, 2016.
Well, first off, I was super excited for this Skinny Chicken Enchilada Skillet because I love Mexican food! This was a quick meal, not too much prep and cooking time was minimal. As far as taste, Ryan loved it; he thought it was delicious and he of course, loved the kick of the roasted tomatoes and chilies. I, on the other hand, thought it was just okay. I admit it was nice that the toppings were personalized (I chose lettuce, sour cream and cheese, while Ryan chose lettuce, sour cream, cheese and cherry tomatoes). I think I was unsure of this dish because of the torn tortillas that were cooked in. When I would take a bite, I thought I was going to be getting a chunk of chicken and it ended up being a mushy tortilla. I would say this was better as leftovers. For me personally, this wouldn't be a top choice on the menu in the future. I think there are other better skinny Mexican dishes out there.
